Satisfying Salads for Hot Summer Days

On a hot summer day, who really wants to turn on the stove or oven? When the house is warm enough as is, opt for a no-cook summer meal, and prepare yourself a crunchy, cool salad instead. Choose one option from each column, and combine to create a salad full of different tastes and textures that will be sure to hold you over from lunch until dinner.

Baby spinach Chickpeas or black beans Blueberries, blackberries, or sliced strawberries Walnuts, sliced almonds, or sunflower seeds Oil and vinegar
Romaine Baked marinated tofu Vegan or regular shredded cheese Freeze-dried fruit(Try apple, pear, or tangerine flavors from Crispy Green.) Salsa
Spring mix Hummus Roasted vegetables(My favorites are bell peppers, mushrooms, sweet potatoes, beets, or carrots.) Raw carrots or radishes Balsamic vinaigrette
Sweet baby lettuces Sliced soy/veggie or regular burger Dried cranberries, blueberries, or raisins Baked corn tortilla strips Greek Yogurt Ranch Dressing
…or a mix of the above Vegan or non-vegan chicken or beef strips Sliced avocado Sliced apples or pears Tofu-Avocado Salad Dressing (Try out this Whole Foods recipe that is full of flavor.)

 Happy cooking!
